Had some something or other that was great at Fernando's Mexican Restaurant on Hwy 49 in Magee. I recommend them highly and will go put them in Pine Belt Dining Hot Spots.

I made a crockpot of Broccoli/Cheddar Cheese Soup. Dessert was a couple of sugar cookies that my niece and I made and decorated yesterday. It was great - I'll be having warmed overs for lunch today. And speaking of lunch - it's about that time!

I'll have Crawfish Etouffee. I cooked up a batch to freeze into single serving's for my Aunt's Christmas Present....that and a Glenlivet Giftset for her. I managed to set me off a big serving of the Etouffee < grinz >.

Last night it turned out to be a dozen Ersters on the half shell at Wintzel's followed by the Flounder Bernaise. GREAT!
Also, the oysters were larger this time. The girl waiting on us kept up with 5 of us and we didn't have to wait for anything.
Spews were cold.
Ice Cream for desert was some really good stuff.

Since it is Christmas day we all saw pretty much a spread wherever we looked.
I had a big fat ham sandwich, first food in two days and it may have been the best ham sandwich I have ever had.
I watched everyone else shovel but didn't want to push it.
In a day or so I figure I will retake my post of general garbage disposal and suck up the leftovers. :D

I think thats it as a matter of fact you have eaten there also? Man they are good and so affordable, I rarely see such great atmosphere and a place where you can get a big burger like that for a little over three bucks. I love them! I must have taken the grandparents to it three times the first week I found out about it.

Cooking 4 strip steaks from the Gourmet Butcher Shop, and 4 of their loaded potatos. That and a loaf of garlic bread only cost 82 bucks. This meat looks as though it was aged well, and has some nice marbeling........better be damn good though!

Last night, I went and got me a fish dinner from Catfish One, with a stuffed crab. It was all really good!
Today, I've put a chuck roast on in the crock pot... garlic, celery, onion, onion soup mix... Will add potatoes and other stuff later. Gonna fix some baby green limas and rolls or biscuits (frozen) to go with it.

Good point, MSQueen. After 18yrs, I have it figured out, for the most part! I've got to get out of this thread, my stomach is growling as i read, no kidding. That crock pot cooking gets me big time. She will put something on, i get up in the middle of the night, and feel like i could eat sunday dinner at 2:00am!!!

Over Christmas, I slow cooked a BBQ Brisket that only fell to pieces in the BBQ - the smell was incredible!

Wife will do a pork roast in the crock pot with Coke. I guess it helps tenderize. Drain, falls apart, and add Cattlemans BBQ sauce. Easy, cheap, and eat for days!

We ended up having it for lunch. It was WONDERFUL. Sliced up potatoes in it. Made my gravy in there, too, and fixed a pot of rice. It will be good heated up. I'll probably fix a plate for my lunch at work tomorrow.

What is Alice Springs Chicken?
It is broiled chicken marinated in worchtshire (sp?) with bacon, sauteed mushrooms, cheese and honey mustard for dipping. I make a healthier version with turkey bacon and honey mustard mustard instead of dressing.

In an effort to continue with my healthy life style change, I cooked up some whole wheat spagetti and tossed it with some minced garlic, green onions, Sun dried tomotoes, bell pepper, a splash of olive oil, some Tony's and two grilled chicken breast. The kids were skeptical ( and I was too, secretly) of the whole wheat pasta, but it was very good!

I think I'll stop by the pic-a-pac and grab me a 40oz. and a can of smoked oysters and a pack of graham crackers. I might even get some potted meat if I am really hungry.

btw that low acid oj is really good and it doesn't give ya heartburn,if you have a problem with that.
i love the low acid oj... and i think it tastes just as good!

Last night it was native fish along with some spiced hush puppies and good company.
Also, being a natural redneck I have grown up used to the sweeter version of cole slaw but I had some last night that would most likely surpass anything you would find in our more upscale restaurants.

Tonight we are having chicken, wrapped in cresent rolls, covered with cream of chicken soup and cheese. Also green beans. Not one word about the calories in this meal because I already planned this before that belly fat and wrinkle thread popped up.

We had a good big lunch; pan fried hamburger patty with tomato sauce w/rice, collards, sweet taters, crackling corn bread, and squash. Had to go light for supper cause I am back on my low cholesterol diet so I just ate a salad.

No idea what I'm going to make. I have stuff to make eggrolls...gonna make some kinda pasta salad tonight so I'll be eating on that for the next few days. My 12 yr old has been begging for chicken and dumplins. He'd rather eat that than anything else I think. I may make that tonight.
I always have a hard time planning out what to make for dinner. When I plan something to cook, by the time I get ready to make it I don't want that anymore.

Okay it is now safe to say we are for sure havng the cake. I made the homemade kind of chocolate icing that you bring to a boil on the stove and then stir and stir until it gets thicker and then pour it on the hot cake.

I dont know what it was called. but there was carrots, peas, parmasian, noodles and some kind of sauce all mixed together, and if you ask it wasnt fettachini alfredo it had a way different taste but was really good.
